How to check if milk and milk products are adulterated? - Ms. Sushma Jaiswal

In India, about 65 percent of the milk is adulterated and sometimes some substances like urea or water or formalin or some other chemicals, synthetic milk, you know, so it becomes very very difficult to check for a common man. However it can be checked through some processes like reduction method which is like reducing the milk to solid, you know. Boiling milk to 2 to 3 hours till it forms into solid you know. So if it is oily or I mean smooth solid, then it’s a real khoya which means it is good quality milk. Otherwise it becomes rock solid you know and its like powdery you know, then it is adulterated milk. So water in the milk, it can be tested like with the consistency of the milk and by doing a simple test of putting 2 – 3 drops in a slanting surface. If the milk leaves a trail, then it means it is adulterated milk otherwise it does not leave a trail, it means it’s a good quality milk. Third is starch in the milk. It can be tested like in little quantities like spoonful of milk, you can add 2 to 3 tablespoons of salt and mix it. If it forms a blue kind of ring, then it is adulterated , otherwise its pure milk. Other one could be synthetic milk, for example made by mixing chemicals fevicol or soap to the natural milk. It can be identified from its bad taste and also, if it is like rubbed the hands you know, then it forms foam like soap you know, and it turns yellow when heated. So these two methods could identify the synthetic milk. Milk adulterated by say vegetable fats and oils like vanaspati or dalda, oil or ghee can be identified by adding some sugar and hydrochloric acid in the milk and if it forms a red ring then it is adulterated. Other adulteration could be urea in the milk. Now urea is very difficult to detect and its generally used for preserving the milk for a longer time and also it does not alter the taste of the milk . But it could have very harmful effect on the body. So to test it, you could do it at home. Take the milk and mix some other powder or soyabean powder into it and shake well and take a litmus paper, dip into it. If the litmus paper turns red to blue, then it means milk is adulterated. The last one could be adulteration by formalin. These are the only substances that are identified so far. So, formalin could be tested by taking little amount of milk and taking sulphuric acid and if it forms a ring, a blue ring , it means it is adulterated. So all these methods are you can apply at home and see what kind of milk you are getting. I would suggest is take milk from a renowned source so that you don’t end up getting adulterated milk. So stay healthy.

Here is a list of most common adulterants in India: 1. Milk A 2012 study conducted by the FSSAI across 33 states found that milk in India was adulterated with diluted water, detergent, fat and even urea. Some of the adulterants that are used in milk are water, chalk, urea, caustic soda and skimmed milk, while Khoya is adulterated with paper, refined oil and skimmed milk powder. The level of adulteration in milk is dangerous to so many levels and has the highest chance of causing stomach disorders. Sweets Do you get Indian sweets covered with a silver foil during Diwali? According to Indian regulations, silver must be 99.9 per cent pure if it is used as a food ingredient. However, with silver becoming expensive many sweet shop owners use silver vark that could contain aluminium. The most common ingredients in making these sweets are khoya and chenna and they're often adulterated with starch. But the good news is that you can test if the sweets are adulterated by boiling a small sample in water, cool it then add a few drops of iodine solution. A blue color indicates the presence of starch. Also, sugar used in making thse sweets might be adulterated with tar dye which only makes it worse. Wheat with Fungus ergot Wheat and other food grains Everybody knows that wheat is very commonly adulterated with ergot, a fungus containing poisonous substances and is extremely injurious to health. Honey There are so many varieties of honey available in the market, but due to its steep price, honey is commonly adulterated with molasses sugar to increase the bottle quantity. According to a study carried out by the Centre for Science and Environment, most honey brands being sold in the country contain varying amounts of antibiotics and their consumption over time could induce resistance to antibiotics, lead to blood-related disorders and injury to the liver. Ice cream Most common adulterants in ice cream are pepperonil, ethylacetate, butraldehyde, emil acetate, nitrate, washing powder etc are not less than poison. Pepperoil is used as a pesticide and ethyl acetate causes terribble diseases affecting lungs, kidneys and heart. Ice cream is manufactured in extremely cold chamber where fat is hardened and several harmful substances are added. Also a kind of gum is added which is sticky and slow melting. This gum is obtained by boiling animal parts like tail, the nose, the udder etc.

It will not normally be present in any specification or declared contents of the substance, and may not be legally allowed. The addition of adulterants is called adulteration. The most common reason for adulteration is the use by manufacturers of undeclared materials that are cheaper than the correct and declared ones. The adulterants may be harmful, or reduce the potency of the product, or they may be harmless. The term "contamination" is usually used for the inclusion of unwanted substances due to accident or negligence rather than intent, and also for the introduction of unwanted substances after the product has been made. Adulteration therefore implies that the adulterant was introduced deliberately in the initial manufacturing process, or sometimes that it was present in the raw materials and should have been removed, but was not. An adulterant is distinct from, for example, permitted food additives. There can be a fine line between adulterant and additive; chicory may be added to coffee to reduce the cost or achieve a desired flavour—this is adulteration if not declared, but may be stated on the label. Chalk was often added to bread flour; this reduces the cost and increases whiteness, but the calcium actually confers health benefits, and in modern bread a little chalk may be included as an additive for this reason. In wartime adulterants have been added to make foodstuffs "go further" and prevent shortages. The German word ersatz is widely recognised from such practices during WW2. Such adulteration was sometimes deliberately hidden from the population to prevent loss of morale and propaganda reasons. Some goods considered luxurious in the Communist Bloc such as coffee were adulterated to make them affordable to the general population. Adulterants added to reduce the amount of expensive product in illicit drugs are called cutting agents. Deliberate addition of toxic adulterants to food or other products for human consumption is poisoning.

The substance which is added with the original drug is called adulterants. Adulterants are either of substandard verities of the original crude drug or inferior drug or artificially prepared or other substance which is present in the original drug which decreases its quality. In general term adulteration is the devaluation of any substance by adding or subtracting anything with the original substance which decreases the quality of that substance and may be injurious to health and may cause the variety of adverse effects from mild, moderate to severe life-threatening reactions. It has been studied in many reports that the adverse drug reaction happens not due to the administration of genuine drug but due to the presence of adulterants in it. So, understanding of all the methods of adulteration and its evaluation technique is necessary to rectify this illegal act and maximizing consumers' safety. This adulteration may be done intentionally or unintentionally. An intentional adulteration is a criminal act and punishable offence, usually in case of crude drug. The motives behind the intentional adulteration are normally commercial one and originate mainly with the intention of enhancement of profits. Powdered drugs are found to be adulterated very frequently. Adulterants used are generally powdered waste products of a suitable colour and density.
