How to check if milk and milk products are adulterated? - Ms. Sushma Jaiswal

In India, about 65 percent of the milk is adulterated and sometimes some substances like urea or water or formalin or some other chemicals, synthetic milk, you know, so it becomes very very difficult to check for a common man. However it can be checked through some processes like reduction method which is like reducing the milk to solid, you know. Boiling milk to 2 to 3 hours till it forms into solid you know. So if it is oily or I mean smooth solid, then it’s a real khoya which means it is good quality milk. Otherwise it becomes rock solid you know and its like powdery you know, then it is adulterated milk. So water in the milk, it can be tested like with the consistency of the milk and by doing a simple test of putting 2 – 3 drops in a slanting surface. If the milk leaves a trail, then it means it is adulterated milk otherwise it does not leave a trail, it means it’s a good quality milk. Third is starch in the milk. It can be tested like in little quantities like spoonful of milk, you can add 2 to 3 tablespoons of salt and mix it. If it forms a blue kind of ring, then it is adulterated , otherwise its pure milk. Other one could be synthetic milk, for example made by mixing chemicals fevicol or soap to the natural milk. It can be identified from its bad taste and also, if it is like rubbed the hands you know, then it forms foam like soap you know, and it turns yellow when heated. So these two methods could identify the synthetic milk. Milk adulterated by say vegetable fats and oils like vanaspati or dalda, oil or ghee can be identified by adding some sugar and hydrochloric acid in the milk and if it forms a red ring then it is adulterated. Other adulteration could be urea in the milk. Now urea is very difficult to detect and its generally used for preserving the milk for a longer time and also it does not alter the taste of the milk . But it could have very harmful effect on the body. So to test it, you could do it at home. Take the milk and mix some other powder or soyabean powder into it and shake well and take a litmus paper, dip into it. If the litmus paper turns red to blue, then it means milk is adulterated. The last one could be adulteration by formalin. These are the only substances that are identified so far. So, formalin could be tested by taking little amount of milk and taking sulphuric acid and if it forms a ring, a blue ring , it means it is adulterated. So all these methods are you can apply at home and see what kind of milk you are getting. I would suggest is take milk from a renowned source so that you don’t end up getting adulterated milk. So stay healthy.

It will not normally be present in any specification or declared contents of the substance, and may not be legally allowed. The addition of adulterants is called adulteration. The most common reason for adulteration is the use by manufacturers of undeclared materials that are cheaper than the correct and declared ones. The adulterants may be harmful, or reduce the potency of the product, or they may be harmless. The term "contamination" is usually used for the inclusion of unwanted substances due to accident or negligence rather than intent, and also for the introduction of unwanted substances after the product has been made. Adulteration therefore implies that the adulterant was introduced deliberately in the initial manufacturing process, or sometimes that it was present in the raw materials and should have been removed, but was not. An adulterant is distinct from, for example, permitted food additives. There can be a fine line between adulterant and additive; chicory may be added to coffee to reduce the cost or achieve a desired flavour—this is adulteration if not declared, but may be stated on the label. Chalk was often added to bread flour; this reduces the cost and increases whiteness, but the calcium actually confers health benefits, and in modern bread a little chalk may be included as an additive for this reason. In wartime adulterants have been added to make foodstuffs "go further" and prevent shortages. The German word ersatz is widely recognised from such practices during WW2. Such adulteration was sometimes deliberately hidden from the population to prevent loss of morale and propaganda reasons. Some goods considered luxurious in the Communist Bloc such as coffee were adulterated to make them affordable to the general population. Adulterants added to reduce the amount of expensive product in illicit drugs are called cutting agents. Deliberate addition of toxic adulterants to food or other products for human consumption is poisoning.
